One of my favorite chocolates growing up was the Crunch bar. I love the combination of chocolate with nuts, granola, or anything with a crunch-like texture. I'm not much of a cook but I do enjoy creating sweets with a healthy twist. There's so many reasons to give this recipe a try. You only need three ingredients. It's so simple to prepare. There's zero additive sugar. It's Vegan and it's delicious!
Ingredients (Serves 1/2 dozen)
3/4 cup Rice Crispy cereal
(1 cup for more crunch)
1 cup & 1/2 dairy-free chocolate chips
2 teaspoons Coconut oil
Combine the dark chocolate chips and coconut oil in a microwave safe bowl
Melt the dark chocolate chips in a microwave in increments of 20 seconds
Pour in the rice crispy cereal into the chocolate
Stir until all of the rice crispy cereal has been covered in the chocolate
Pour into a silicone muffin/cupcake baking tray
Freeze for 10 mins
Chances are you won't have any leftovers but if you’d like to make a bigger batch and store for later I recommend wrapping in parchment paper and storing in a reusable storage bag in the freezer. Just thaw for a few seconds to two minutes before enjoying.
