In the Spotlight

One of my favorite ingredients to use is oats. Whether it's for breakfast or snacks it's a simple base or additive to create a healthy and delicious treat.
These Cocoa balls are perfect for anyone that wants to create a home-made sweet without having to use too many ingredients nor take up too much time in the kitchen.
Aside from being quick and easy to make they are dairy-free.
3 1/4 of cup Oats
1/2 cup of Coconut Oil (measured as liquid)
1/2 cup of Peanut butter (or any nut butter)
1/2 cup of Almond milk
1/2 cup of Brown sugar
1/4 cup of Cocoa powder
1 tsp. of Pure Vanilla Extract
1/2 tsp. of Salt
Place the oats in a bowl and set aside
In a cast iron skillet or sauce pan, combine the coconut oil, peanut butter, almond milk, brown sugar, cocoa powder, and salt
Turn the heat on to a medium and stir until the sauce comes to a boil
Stir for another 5 minutes
Remove from heat and add the Pure Vanilla Extract
Add the oats and mix until they are coated in the sauce mixture
Let cool then create small to medium size balls
Place onto a sheet of wax or parchment paper and allow to cool to harden
*You can place the balls in the refrigerator or the freezer as well*
They are also toddler approved!
